dc.description.abstractЗдійснено аналіз літературних джерел щодо перспектив вирощування та використання у біотехнологічних процесах спельти Triticum spelta L., до якої сьогодні спостерігається значний інтерес. Визначено мікрофлору спельти як можливої альтернативної сировини у спиртовому виробництві, а також мікрофлору спельтового сусла, одержаного термоферментативним обробленням зернової сировини. Показано переваги спельти у порівнянні з пшеницею звичайною щодо зменшення контамінатної мікрофлори на зерні і в суслі.
dc.description.abstractThe analysis of literature sources on the prospects of cultivation and use of spelt Triticum spelta L. in biotechnological processes is carried out. Today there is considerable interest in spelt. Spelt can be an alternative raw material in alcohol production, so its microflora has been identified. The wort was obtained by thermoenzymatic treatment of grain raw materials. The microflora of spelt and wheat wort was determined. The advantages of spelt in comparison with common wheat in terms of reducing the contaminating microflora on both grain and wort are shown in the article.
